Never promised pretty, but it will always be tasty! These gluten-free cinnamon sugar apple donuts might not win a beauty contest, but they definitely surprised me! The crispy, cinnamon sugar-coated dough reminds of funnel cakes & elephant ears, something not had in nearly 20 years since going gluten free. Add a tart apple center for a delicious fall treat.

Instructions

1. Slice apples into ¼-inch rings, remove the centers & pat dry.
2. Mix pancake batter according to your package, using less liquid for a thicker consistency. You want the batter thick enough to cling to the apples, not run off like regular pancake batter. The author used ½ cup Da Wafulls mix with 4 Tbsp water per batch.
3. Heat coconut oil in a skillet over medium-low to medium heat.
4. Dip each apple ring into the batter, coating both sides. Carefully place in the hot oil & cook until golden and cooked through, flipping with tongs. Watch for splattering!
5. Combine coconut sugar, cinnamon & sea salt. Gently coat the warm apple donuts.
6. Finish with a dusting of powdered sugar & ENJOY! Eat them as is, or serve them warm, add a caramel drizzle or even a scoop of vanilla ice cream!
