Cozy & Easy Baked Apple Pancake (Gluten-Free)

Preheat the oven to 425°. In a big bowl, whisk the eggs, almond milk, sugar, vanilla, salt, and cinnamon until smooth. Add the gluten-free flour and whisk just until there are no lumps! Place the butter in a 13x9 baking dish and slide it into the oven until melted and bubbling (about 5 minutes). Carefully swirl the butter around so it coats the bottom and sides. Arrange the sliced apples in the dish (this can be done ahead of time to make mornings easier). Bake for 8–10 minutes until the apples soften and the butter starts to brown slightly. Pour the batter right over the apples, sprinkle the coconut sugar evenly on top, and return to the oven. Bake 20–25 minutes, until puffed and golden around the edges. Remove from the oven, spread some butter over the top, & dust with powdered sugar! It deflates as it cools — that’s normal! Mom note: Make the night before & reheat in the morning or you can prep the apples the night before (shake in container with lemon juice) and have everything ready to go!
