Gluten-Free Grain-Free Snowball Cookies

Preheat the oven to 325°F. Line a baking sheet with parchment paper. In a small bowl, mix the almond flour, softened butter, 3 tablespoons powdered sugar, vanilla, and salt until a dough is formed. You can use a stand mixer or a hand mixer. Keep mixing even if the dough seems crumbly until it's combined. Add the walnuts and white chocolate chips; you can adjust the amounts to your liking. You may need to use your hands to help mix them in. Roll tablespoons of the dough into balls and place them on the baking sheet (a small cookie scoop works well). Bake the cookies for 15-16 minutes or until they start to turn light golden brown on the bottom. Let them cool on the pan for about 5 minutes. Roll each cookie until coated in a shallow bowl with the remaining 3 tablespoons of powdered sugar. Set cookies out to set and enjoy! 

Tips: You can use vegan butter and Enjoy Life white chocolate morsels to make the cookies dairy-free. Any nut can be used, such as almonds or pecans, though walnuts are recommended.
