Stop what you’re doing and make these mini apple pies! Featuring a sugar cookie crust, gooey cinnamon apples, and a caramel drizzle, these gluten-free treats take under 30 minutes and are perfect for any holiday party.
1. Preheat oven to 350°F and spray a muffin tin.
2. Break the package of sugar cookie dough into 12 pieces and add one block to each cup in the muffin tin. Bake for 8–10 minutes until lightly golden.
3. Press down the center of each baked cookie cup to form a cup using the back of a spoon or a lightly greased glass.
4. Sauté the peeled and cubed apples in coconut oil. Add maple syrup, cinnamon, nutmeg, lemon juice, and a pinch of salt. Sauté until the apples are soft and gooey.
5. Add 1–2 tablespoons of the apple filling to each cookie cup and bake for another 5–6 minutes.
6. Finish with homemade caramel (refer to a separate recipe for this) and whipped cream (optional but highly recommended).
